I was looking for sugar-free recipes today because I wanted to make some cookies. Are you thinking that cookies without sugar would be horrible? Yeh, me too, which is why I ended up making these sweet-intense cookies. They don’t have *refined* sugar, but they’re still full of sucrose (50% of which is fructose) because of the coconut sugar, and glucose & fructose thanks to the honey. But if you’ve still got a craving for something sweet, these are fast and easy to make, and full of *all* the flavours - just make sure you eat one, slowly, and then put the cookie jar away.
Red & Honey’s 20 Minute Oatmeal Cookies
(Unfortunately I didn’t have any oatmeal but I had substitutes. I did have rolled oats but not quite enough so augmented my version of the recipe with quinoa flakes and desiccated coconut and it all worked out in the end. The recipe seems to be robust enough to cope.)
